Moreover, the ratio of PUFA/SFA was considered a criterion in the quantification of healthy meat product. The minimum value should not be less than 0.45 (Nürnberg et al. 1998). From a dietetic point of view, the ratio of n-6 and n-3 fatty acids have great importance. Simopoulos (2001) recommended a n-6/n-3 ratio of 4-6 in functional food products. The n-6/n-3 ratio in sturgeon hybrid fillets was favorable. The control diet resulted in a ratio of 0.52 and the experimental diet was 0.86 (Fig. 3). Results There was a signficant difference in the dry matter and lipid content of fillets from fish fed the two diets (Table 2).
