Sturgeon aquaculture and the market will surely expand further. Sturgeon caviar is a very special food, with a very specific consumer sector. It will be difficult to reach the historically high production levels of cultured caviar obtained in the past and high-quality cultured caviar is difficult to produce. International caviar is the demand market of the coming decades (Bronzi et al. 2011). Ultimately farmed sturgeon caviar will completely replace wild sturgeon caviar. Sturgeon products will be diversified, the sector will become more specialized, trending toward a mature sturgeon industry. The current difficulties of the sturgeon industry are temporary. If done properly, the sturgeon industry will have few obstacles.
