The Bio Eco Agro laboratory develops innovative research on the quality of aquatic products, with a particular interest in quality and freshness markers. Within this laboratory, the host team specializes in the study of oxidation markers, major processes involved in the deterioration of food products during storage. The preservation of products at low and very low temperatures (refrigeration, freezing) induces oxidation reactions likely to directly impact nutritional, organoleptic, and sanitary quality. The identification and measurement of these oxidation phenomena are therefore essential to establish reliable quality indicators. In this context, the recruited engineer will contribute to the development of experimental models to characterize the involvement of mitochondria in oxidation processes at different temperatures, as well as to the implementation of analytical tools on the CPER IDEAL spectral platform.

Main Responsibilities

Development of oxidation models under controlled conditions Set up and optimize experimental models to characterize mitochondrial activity and its role in the oxidation processes of aquatic products. Study oxidation at 4°C and at very low temperatures (cryogenic conditions). Characterization of reactive oxygen species (ROS) Measure ROS production via: Fluorescence techniques (specific probes, production kinetics, etc.) Electron Paramagnetic Resonance (EPR) for the identification and quantification of free radicals. Participate in the optimization and validation of analytical protocols. Analysis of food matrix oxidation Develop and implement methods to measure: the level of protein carbonylation (protein oxidation markers), the oxidation of polyunsaturated fatty acids (e.g., hydroperoxides, secondary aldehydes). Contribute to data analysis, interpretation of results, and writing of scientific reports. Responsibility for the spectral platform (CPER IDEAL) Ensure the management, routine maintenance, and monitoring of the spectral platform equipment. Participate in the onboarding, training, and support of internal users. Conduct prospecting and outreach activities with: partner laboratories, academic and industrial stakeholders in the sector. Promote available analytical techniques and identify collaboration opportunities.

Requirements

Technical Skills

Solid knowledge of chemistry, biochemistry, cell physiology, or mitochondrial biology. Proficiency or experience in: fluorescence techniques, oxidation measurements (proteins, lipids), ideally in EPR (training provided during the contract). Routine practice of analytical methods in the laboratory and ability to follow complex protocols. Skills in data processing and analysis. Personal qualities Scientific rigor, autonomy, and organizational skills. A passion for experimental work and solving technical problems. Strong interpersonal skills and the ability to interact with various partners (researchers, engineers, industry professionals). Motivation to be involved in the daily life of a research platform. Required profile Master's degree (Bac+5) / Master 2 / Engineer in biology, biochemistry, chemistry, biotechnology, or related disciplines. Experience in a research laboratory is a plus. Interest in issues related to food quality and oxidation processes.
