Unopened tins stay good for 4-6 weeks if kept very cold. The official caviar shelf life depends on temperature, so place it in the back of your fridge, not the door. Once opened, eat it within 24 hours. My tins from Bester always stay fresh if kept chilled on ice. Standard household refrigerators run slightly warmer than commercial chillers, so packing an extra ice pack around the tin helps maintain the ideal near-freezing temperature. Never put it into the home freezer, as freezing will rupture the delicate membrane of the pearls and turn them into mush. Treat it gently and you will enjoy top quality.
